Okay. Its on the 8th, starting at 5 PM or so. Menu IS meatballs, mashed potatoes and gravy, and the meatballs will be done in 30 minutes from right now, and frozen to be thawed and reheated on Friday. They're real good, I think. Hard to not keep nibbling...

Anyway, that's dealt with. The only 'hardcore' cooking that should be going on AT the party will be the mashed potatoes and any side dishes I come up with. I'm considering getting some Mrs. Smith apple pies to make just before we start, so they'll be cooled to an eat-able state by the time we want dessert.

The usual munchies (crackers, cheese, fresh veggies and such) will be available, and I plan to have a selection of pop and beer; just what is still uncertain. I'll hopefully be getting some help to obtain stuff, so we'll see.

That's the party update- See those of you coming then!

Oh- I made about 130 meatballs, roughly 16 to a pound or so. We should have enough. :)

Here's the recipe, before I forget- Note the modifications below, and that this is HALF what I made for the party.



3# hamburger (85% lean)
2 eggs (grade AA large)
3 medium (just bigger than your palm) yellow onions
1 cup Bella bread crumbs (crumbled saltine crackers work too- use less salt then!)
6 shakes Mrs. Dash (yellow cap)
Other spices to taste- I used salt, black and white pepper, and just a tiny bit of cayenne.
1/4 cup chives
1/4 cup dried parsley

chop the onions fine and mix all of the above by hand in a large bowl. Make 1" balls of the mix and fry til the surface is browned, turning for even browning. Put the browned meatballs in a casserole or other oven-safe pan, and preheat the oven to 350 degrees f.

Sweep the bits of burned onion out of the pan (there WILL be some), but keep the leftover oil. In this oil brown one more finely chopped onion til it clears and gets just a touch of color. Put three cans of cream of mushroom soup into the pan with 1 1/2 cans of water,and spice to taste. Mix it well and heat through, then pour this over the meatballs in the casserole. Cover and place in the oven for 30 minutes or so, checking to make sure the meatballs are cooked through.

Mods 01/10: 3 eggs, 2 cups crumbs, 2 scant tablespoons salt, 2 scant tablespoons pepper, 1/4 teaspoon cayenne, about 1/4 cup olive oil.

The sauce is easy- cream of mushroom soup, spiced and perhaps using consomme instead of water. ;)
